
Jelena Dokic shares her favourite way to serve our traditional Cheese & Chive Omelette and gives it a tasty Mediterranean twist!
Jelena’s Mediterranean omelette
INGREDIENTS:
1 Jenny Craig Cheese & Chive Omelette
1 cup spinach leaves
¼ red onion, finely diced
4 cherry tomatoes, sliced
¼ red capsicum, chopped
20g reduced-fat fetta cheese, crumbled
1 tbsp fresh basil, chopped
1 tbsp fresh parsley, chopped
Balsamic vinegar and paprika to taste
METHOD:
1. Prepare the salad by placing spinach leaves, red onion, tomato, capsicum, fetta cheese, basil and parsley onto a plate.
Drizzle with balsamic vinegar and finish with a sprinkle of paprika.
2. Heat the Jenny Craig Cheese & Chive Omelette as per instructions on the packet.
3. Serve the omelette with the prepared salad.
